I know its cheesey to refere to films.. but think of any horror movie involving large aliens that hide and skulk about lots, also how the humans are always hard pressed to hit them with guns as they jump about so quick.. then think of a dread, they arnt gonna hide so easy.. obv not a direct comparison to 40k.. but similar lines.
Also, think about lictors.. they are not that different in size to carni's.. yet they infiltrate and hide with ease..

All nids can hide. However even the fluff on the carni's has them being tough, massive forms that shrugs off damage and not like other more nimble critters who skulk around and avoids hits.
The Carni's basic body construction also does not lend itself to the same nimble behavior of the other Nid's. Terminator armour and massive fixed claws assure this. Its built a lot more like a walking death machine than anything else.
